You should explicitly test both halves of upsert.

First request

External ID does not exist

Expected:

Account created

Store Salesforce ID.

Second request

Same:

customerId

but changed:

phone

Expected:

same Salesforce Id
new Phone
exactly one Account

This is one of the most valuable Mule→Salesforce integration tests.
