Suppose source record disappears.

Your query:

WHERE LastModifiedDate > watermark

won't necessarily tell you:

this record was deleted

You may need:

source tombstone/change event
Query All
CDC
explicit active/inactive flag
periodic reconciliation

This is why sync design often gets complicated.
